Houjicha is made from the remains of the bancha. After it is dried, the tea is roasted in a hot pan and then quickly cooled. With this process the caffeine is evaporated and the tea becomes less bitter. With its clear, light taste Bancha Houjicha is in Japan recommended for children and elderly people.
